Why we cook over oak and pecan

Every morning starts the same way: the oven is lit at seven, and by eleven it has settled at the heat we want for the first flatbreads of the day. We burn a mix of oak, for long, even heat, and pecan, for a gentle sweetness you can taste in the chicken skin and the burger crust.

What the fire does

A wood oven cooks from three sides at once: the floor, the dome and the flame. That is why our flatbreads blister in ninety seconds and why the Sage Roast Half Chicken comes out crisp outside and juicy inside.
